One of our joys at Lucienne's has been bringing high quality treats to people with dietary restrictions. We developed our own Stevia sweetener blend, which we use for both our Sugar Free Chocolate and Sugar Free Nut Cookies.
Our Sugar Free Chocolate is made with premium quality cocoa beans, grown on Rainforest Alliance Certified™ farms in Ecuador. The beans are roasted and processed in small batches, which helps to maintain a high level of antioxidants and provides great aroma and flavor. The sweetener and cocoa are "conched" together, grinding slowly over
several days.The result is a smooth and delicious Dark Chocolate, with
83% cocoa content, but with the flavor of a 70% Dark Chocolate. Try it plain, or flavored with Orange or Mint. All our ingredients are 100%
natural.
Our sweetener is made using Rebiana and Erythritol. Rebiana (also known as rebaudioside A or rebA) is the sweet extract from the Stevia Leaf. It is extracted by steeping the Stevia in water and then separating the Rebiana. Erythritol is a natural sugar alcohol created by fermenting glucose with the yeast Moniliella pollinis. Unlike other sugar alcohols, Erythritol is absorbed by the body and does not cause gastric distress.
The result is a non-caloric, all-natural sweetener with great taste and free from common side effects of many artificial sweeteners.
